BLT Guacamole

Jane @ Jane's Adventures in Dinner is hosting a Make It Mine link party, and the subject for today's challenge is Guacamole!  I decided to go with a variation on a BLT guacamole recipe.

BLT Guacamole




Ingredients:
4 strips Nueske's Applewood Smoked Bacon, cooked crisp and crumbled
4 ripe, Fresh California Avocados, seeded and peeled
1 tsp. salt
1 tsp. Texas Pete hot sauce
¼ cup Sir Kensington chipotle mayonnaise
Juice of one lime
2 small heirloom tomatoes, seeded and chopped (one red and one yellow)


Instructions:
Place all ingredients except tomatoes in a medium bowl; mash and combine with a fork until the texture is semi-smooth.



Stir in tomatoes.

I couldn't even get the table properly set before hungry folks started eating-up the guacamole.  We like Scoops tortilla ships because they hold dip so well. This guacamole makes a delicious condiment for a grilled chicken sandwich.




We bought the placemats while in Mexico last winter.  They are made by the Otomi, a group indigenous to Mexico.  Their traditional embroidery includes colorful, simple images of the natural world — flowers, rabbits, deer and trees — against a natural white cotton background.



The centerpiece is a simple arrangement of Lulu Dark roses and green vibernum.

    I love the Viburnum, I have had a plant for a couple of years and it has never, ever bloomed.

  2. I do not know if I can get on with my life after seeing this guacamole...at least it is distracting me from the chocolate I have been stuffing in my face! Why can't you live within walking distance?!?!

  7. Oh my, the Guacamole looks yummy. Love the colorful place mats. Mexico is such a fun place. We went to Cabo years ago and had a great time.
