I finally checked-out a copy of Modern Hospitality by Whitney Miller last week, and I'm enjoying it so much! Some of you may recall that Whitney won Season One of Master Chef. Whitney wowed the judges with her down home Southern cooking with a modern twist. And that's what I love about this recipe book: Southern Classics redefined and classic recipes with a Southern accent. The photography is beautiful, and most of the recipes are easy-peasy.

I've enjoyed cooking from this book so much I've ordered a copy to keep. If you haven't checked this one out yet, I highly suggest that you do!
Check-out this recipe for Butter Bean Hummus. I love how Whitney creatively uses a Southern staple like butter beans to make a traditional hummus.
Butter Bean Hummus
Ingredients:
1 T olive oil or other source of fat
2 cans (15 ounces each) large butter beans, rinsed and drained
1 T fresh Meyer lemon juice
1 t tahini (I use Krinos brand)
1 t Tuscan Sunset spice from Penzy's spices
1 small garlic clove, minced
Salt and ground black pepper
2 T extra-virgin olive oil
1/4 t paprika
Place butter beans in a large skillet with olive oil and cook over medium heat for 5 minutes. Scrape the butter eans into a food processor and puree for 1 minute. Add 2 tablespoons water, the lemon juice, tahini, and spices and process until smooth. Scrape the mixture into a bowl and stir in the garlic. Season to taste with salt and pepper.
To serve, transfer the bean mixture to a small serving bowl and smooth with the back of a spoon. Drizzle the olive oil over the hummus. Sprinkle with paprika. Serve with chips or fresh crudités. I also sprinkled a salt-free seasoning on top, Sunny Spain by Penzy's Spices.

My Granddaughter loves that show. I think she will grow up to be a great cook. I have never tried hummus, but this recipe sounds good. Thanks for sharing the book with us.

Those all look fantastic! I love making hummus with unusual substitutions. I don't think I've ever consumed butter beans, but if I can find them, I will absolutely try that recipe. Thanks for sharing!
