Autumn/Halloween Decor *plus* Where Have You Been, Spaghetti Squash?

Here's some Halloween Decor from around our home excluding the breakfast room and dining room. I'm waiting to reveal those rooms for link parties!  :D

















Here are two recipes for a healthy autumn dinner:

Parmesan Chicken

Ingredients:
6 chicken breast halves
6 oz. plain Greek yogurt, nonfat
1 T mayonnaise, low fat
1/2 cup grated parmesan cheese
1/2 t pepper
1/2 t garlic powder
1 T Italian seasoning (I use Penzy's Tuscan Sun)

Before baking



Directions:

1.   Preheat oven to 375 degrees and spray the inside of a 9" X 13" glass baker.  
2.   Lay the chicken inside the pan.  Mix together the remaining ingredients and spread evenly over each piece of chicken covering each one thoroughly.  This will ensure that the chicken doesn't dry out!
3.   Sprinkle on a bit more fresh parmesan over all the chicken and bake uncovered for 45 minutes.


Yummy!



Skinny Spaghetti




Ingredients:
3 lb. spaghetti squash 
1 T Italian seasoning
1 clove garlic, minced
1/4/ c grated parmesan cheese
1 T light margarine, melted

Directions:

1.   Pierce squash with a knife several times and microwave on high for ten minutes.
2.   Rotate it and microwave on high 10 more minutes or until soft.
3.   Cut in half, remove seeds, and scrape out the inside which will come out in strands like noodles (this is so cool).  
4.   Toss with remaining ingredients and serve.

Each dish serves six, and both are better served as leftovers.  Each serving for this meal:  298 calories!

  3. What cute decorations you have there, Ricki Jill. Everything looks darling. I haven't made spaghetti squash in a LONG time. I got on a kick of making it one time and my family said if they never had it again that would be soon enough. lol I think I need to give it another go- xo Diana

  4. We had spaghetti squash with marinara sauce tonight for dinner. I added TVP (textured vegetable protein) -- such a great meal!

    Now you gave me an excuse to go to Penzy's. That is a spice of theirs that I have not tried. Their Vietamese cinnamon is the best ever!

  7. LOVE your decorations!! I'm a little disappointed, my house is being painted right now and unfortunately because of it, everything is covered in dropsheets, and I'm not getting the chance to enjoy my fall decor. :( I know the freshly painted house will be worth it, though!!
    I'm making spaghetti squash for the first time tonight!! Can't wait to try it, might use this recipe! Thank you for sharing!! :)

  12. I LOVE that crochet covered pumpkin. So pretty!
    I really really need to try spaghetti squash. I've heard so many ravings about it. And I love squash. I'll have to pick some up on my next trip to the store.

  14. Cute decorations! I've not cooked spaghetti squash but have eaten it several times. Great substitute with pasta sauce.
    Finally pulled out some Halloween and fall decor here now that the temps are cool. It feels like autumn!

  15. The spagetti squash sounds so yummy, and I like all your Fall decor, espeically those white glass pumpkins. Didn't you have those last year, I kind of remember seeing them. I also got a little white pumpkin this year and a white owl. I love the traditional orange colors, but I have seen alot of white this year too, and I'm lovin' it.

  16. Your chicken and spaghetti squash look yummy. I haven't had spaghetti squash in years. Now you have me thinking about making it. I've never cooked it in the microwave. Thanks for your recipe and tip on nuking it. Your Halloween touches around the house are so pretty. What is the plant in the second photo?

  17. The little plant is called a pincushion plant! I usually see them this time of the year, and I like the little orange berries on them!

  19. I grew Spaghetti squash last year and we were eating it for months. It's very tasty and I used it in all sorts of recipes. I do love your little pumpkin basket.
