Gluten-free blueberry muffin

P1040362

I have been playing with my Mother's Day presents:  muffin baker and Blackbird Bakery Gluten-Free recipe book.  I have not tried any of the recipes in it yet; I need to buy some of the more obscure ingredients for gluten free baking from Whole Foods, and I have not had time to shop there recently.

I was not totally crazy about the recipe I used for these muffins, so I won't post it.  Once I perfect it I will, promise!

Only one more day of school left!  YAY!!!

Until next time...

Blessings!

  12. I want the pan! I've never seen one like it...just beautiful. I think I should try gf baking, however, so many ingredients are needed. Let me know when you perfect the recipe!

  15. Where did you find that muffin pan. It is marvelous! Looks great with the Taylor ceramics.
Just gave myself a little McK-C gift of two of the small compotes that were on sale at NM. I've admired them since they first came out.
Hope you have a fun holiday weekend. ~ Sarah

  16. Love your new profile picture, gorgeous lady!
I also love the cute muffin pan.
I am such a horrid baker.
Too much like chemistry I guess!
Plus I am not a perfectionist when it comes to measuring out items.... oops.
    That explains a lot right!?

Hope you are enjoying school being out and the holiday weekend.

  18. Well, I found a chocolate GF muffin recipe that I love and it is easy. I posted it here--plus low in fat and you would never know it : http://nannykimsrecipes.blogspot.com/2012/05/found-here-httphealthyisalwaysbetter.html

There is one here that looks really good too--it is strawberry muffins and it is similar to the chocolate one--you would just have to use Bob's gluten free oats: http://dashingdish.com/recipe/strawberry-shortcake-muffins/
