I set our dining table simply for a spring dinner. I wanted a soothing palette for a change! I am serving a light dinner of fish tacos with key lime vinaigrette over slaw. Yummy!
My friend Ainslie sent me this recipe for the key lime vinaigrette.
KEY LIME VINAIGRETTE
3 fresh key limes or 1/4 cup key lime juice
1 tablespoon extra-virgin olive oil
1/2 tablespoon raw apple cider vinegar or vinegar
1/2 tsp. salt
1/2 tsp. pepper
pinch of garlic powder or garlic salt
honey, to taste
Whisk all. Keep tasting for desired flavor.
