The Only Cheese Grits Recipe You'll Ever Need

Happy Monday, My Lovelies!

My family members have very strong opinions about certain recipes, especially recipes involving cheese.

One example: Havarti is the only cheese one should use to make grilled cheese.

They also have strong opinions about cheese grits: They should only be made with smoked gouda cheese.  Cheese grits is the perfect companion for almost any shrimp dish, like New Orleans style bar-b-q shrimp, or shrimp in tomato sauce.  When I make cheese grits for dinner, I almost always serve it with shrimp.  I usually make or purchase my favorite tomato sauce (about 5-6 cups), heat it up on the stove, and add 1 1/2 pounds of peeled and deveined shrimp.  When the shrimp turns pink, the sauce is done.  Keep it warm until the cheese grist are ready.

Another thing you must know about this recipe is that I truly believe that the white pepper makes it.  If you don't like white pepper, then this is not the recipe for you.





Smoked Gouda Cheese Grits

Ingredients:

3 cups chicken broth
1 cup whole milk
½ teaspoon salt
¼ teaspoon freshly ground white pepper
1 cup uncooked quick-cooking grits
1-1/2 cups shredded Smoked Gouda cheese (I usually use about 7-8 ounces)
1 tablespoon unsalted butter


Procedure:

Bring first 4 ingredients to a boil in a medium saucepan.
Gradually whisk in grits.
Cover, reduce heat, and simmer, stirring occasionally, 5 minutes or until thickened.
Remove from heat.
Add cheese and butter, stirring until melted.
Serve immediately.

If you are serving the grits with a shrimp dish, place around a 1/2 c grits in a medium bowl, and spoon the shrimp on top.

This recipe serves four people.


If you have leftovers, cheese grits are great for breakfast bowls.  Heat the grits in a bowl in the microwave, and add a cooked egg on top.  I like an over easy egg or coddled egg on cheese grits.

Sorry I don't have any photos of the dish.  It was too late to take any decent photos, and there were no leftovers for breakfast!

  1. I have never been a big fan of grits but I never had them made with Gouda cheese either. Might have to try this and give them another chance lol!
