Slow Cooker Sweet Potato Chili

As promised, here is my recipe for Slow Cooker Sweet Potato Chili.  I love this recipe because it's low calorie (362) and high in fiber with 22g of fiber and 20g of protein!


Not very pretty....but it does taste great!


Slow Cooker Sweet Potato Chili

Ingredients:
1 medium red onion, chopped
1 bell pepper, any color, chopped
4 garlic cloves, minced
1/2 T chili powder
1/2 T smoked paprika
1 T ground cumin
2 t unsweetened cocoa powder
1/4 t cinnamon
28-ounce can fire-roasted diced tomatoes
15.5 oz. can kidney beans, rinsed
15.5 oz. can black beans, rinsed
1 medium sweet potato cut into 1/2 inch pieces
1 cup water


Prep is so easy for this recipe...just a little chopping, measuring and mixing, then forget about it for a few hours!


Method:
Pour the contents of the tomato can (including liquid) into crockpot.  Add all other ingredients and stir.
Cover and cook on low for 7 - 8 hours or high for 4 to 5 hours.

Top with cilantro and fat free sour cream or Greek yogurt if desired.

Number of servings: 6
Serving size:  One heaping cup.

  1. I'd really like to try this. We have something in the slow cooker about once a week and I could use a new recipe. I love sweet potatoes in any dish! Enjoy your evening my friend!

  2. We have both our kids in town and my husband is grilling burgers - 3/4 beef and 1/4 ground bacon. It would really be decadent if we added a little bleu cheese. Instead of buns, we are using fresh from the baker asiago cheese bread.

    Steve likes chili, but it isn't something he makes so maybe I will make some on our first chilly day.

  7. I will have to give this a try. I love stews and the healthy the better now. I have never had sweet potatoes in a stew before. Time to try.

  10. This sounds really yummy, Ricki Jill! Might have to add some TVP in place of some of the beans to make it low-carb, but I like the idea of the sweet potato -- we love 'em!

  12. The chili looks fine RJ, and I’m sure it was delicious. I like this is a little different for the standard fare. I’m adding to my list of recipes to try.
