Classic Christmas Cake Recipe

Happy Thursday, My Lovelies!  My bestie Barbara lent me this vintage Martha Stewart Christmas craft and cookbook: She thought I'd get a kick out of it, and I did!  Look how young Martha looks!  It was published in the late eighties.  (I am a huge fan of hers, by the way...)

If you ever need a recipe for cassoulet that serves 100 people, then this is the cookbook for you!  Also, it is a very unique book because the pictures in it are super dark.  They convey a wintry atmosphere reminding the reader of short days, cold weather, and comforting meals.



I enjoyed reading about her projects.
Most of her gift ideas were surprisingly easy, and the way she wrapped them were also simply beautiful.  

 

But not all of the recipes and projects are over the top.  I found a simple recipe for sour cream cake, and I think it is the exact one my grandmother used to bake!  You probably have practically all the ingredients in your kitchen (right now!) to bake it.


Sour Cream Cake

Makes one 5" X 9" loaf

Ingredients:

1/2 c unsalted butter
1 1/2 c sugar
4 large eggs, separated
1 c sour cream
2 t lime juice
1 t grated lime zest
1/2 t almond extract
1 3/4 c sifted cake flour
1/2 t baking powder
1/4 t baking soda

Procedure:

Preheat oven to 325.  Butter and flour the loaf pan.  

Cream the butter and sugar until light.  Add the egg yolks, sour cream, lime juice and zest, and almond extract.  Continue mixing until fluffy.

Sift together the dry ingredients and stir into the sour cream mixture.  Beat the egg whites to soft peaks and gently fold into the batter.

Fill the pan 3/4 full with batter and bake for 50 to 55 minutes, or until a cake tester comes out clean.  Remove from pan and cool on a rack.





The almond extract and the lime juice and zest make the batter smell heavenly.



Y'all, this cake is delicious!  Bake it for your family during the holidays!

  1. Another blogging friend shared that book of Martha’s, too, Ricki Jill. I must look for it because I love cookbooks. The cake does sound quite heavenly and I like that it’s a small loaf pan and not a bundt pan size.

  2. I love those old Martha books. My sister has a ton of them and sometimes I think about borrowing them just to take a peek back. So much goodness still packed inside. Your cake looks delicious and that pan...wow!! My favorite!!
