Overnight Oatmeal Round-Up

Today's recipe layers ingredients for overnight oatmeal in jars.  

Happy Thursday, Lovelies!  Do you like oatmeal?  I love it, and I try to eat it for breakfast most days.  However, in the summer I don't always want a hot breakfast.  I saw a recipe in The Easy Diabetes Cookbook for overnight oatmeal I wanted to try.  You can read more about this book by clicking on this link.  My recipe is slightly different, but I highly recommend you take a look at this cookbook.



Blueberry Cheesecake Overnight Oatmeal

Ingredients:  
4 oz. cream cheese, softened
1/2 cup plain Greek yogurt
2 cups unsweetened almond milk (vanilla is best)
2 T pure maple syrup
1 T pure vanilla extract
2 cups frozen blueberries
2 cups gluten-free rolled oats (Bob's Red Mill is my choice)
Graham Cracker Crumbs (optional)

*You'll need four 12 oz. glass jars.




Procedure:
Add everything but the oats, blueberries, and graham cracker crumbs to a large mixing bowl.  Whisk ingredients together until smooth.

Add 1/2 cup blueberries to each jar.  Next, add 1/2 cup oats on top of the berries.  Divide the cream cheese mixture evenly between the four jars.

Secure the lid on each jar and shake them vigorously to combine all the ingredients.  Place the jars in the fridge overnight, and breakfast is ready in the morning!


All you have to do is steep the tea or brew the coffee!







Top each jar with more blueberries and a sprinkling of graham cracker crumbs if desired.

  1. We enjoy our oats here too. Most days Jim has his but like you when it's hot I enjoy fruit. I will have to try this, sounds delicious and I want to try your brand of oats...........

  2. Wow, the overnight oatmeal looks delicious! I'll have to try it! We often make oatmeal over night in the crock pot. That's pretty terrific, too, but is served warm.

  3. This newest recipe sounds the best to me! I eat the same thing for breakfast every day (shredded oat & bran, 1/2 banana, milk - cold), unless we are out of town. I really like the sounds of this!

  4. Rick does a slightly different recipe of this still but swears by his cold oatmeal in the summer, hot oatmeal in the winter. I'm not big on cold oatmeal but love th ehot.
