How was your weekend? Did you do anything fabulous? I pretty much stayed home and read a little and blogged a little.
I wanted to share with you my family's favorite recipe from this past week's CSA (community supported agriculture) subscription box from Stone Hollow Farmstand. The photo above only shows a few of the items, but if you'll look at the top, you can barely see Swiss chard. That and the delicious eggs inspired my choosing the following recipe: Frittata, Flattata. Since we had a few potatoes leftover from week one, this recipe was a perfect match.
So far we've received a dozen eggs in each box.

What you'll need to make this recipe:
6 slices bacon, chopped
1 potato, peeled and sliced into thin 1-inch pieces
2 tablespoons water, or as needed
1 clove garlic, thinly sliced
½ teaspoon red pepper flakes
salt and ground black pepper, to taste
1 bunch Swiss chard, chopped
8 eggs, beaten
⅓ cup grated Parmesan cheese
Here is the video that shows how to make it. There are helpful hints in it, and I think it's well done.

Here's a hint: pay close attention to how Chef John stirred the eggs into the mixture. I think I stirred mine a little too much, so do as he does!
The frittata was delicious! I cut the leftovers into wedges, and we had it the next two mornings for breakfast. It reheats well in the microwave.
I absolutely loved the chard in the recipe. It gives it a nice flavor and complements the bacon and potatoes.

Last weekend at the lake, we attended an art show and vintage market benefitting Children's Harbor. Children's Harbor is a beautiful facility on Lake Martin that provides accessible, state-of-the-art camp facilities at no cost for seriously ill children and their families.
I purchased this pretty Fiestaware teapot at the sale, and I love the color. We needed one at the cabin, and this is the perfect size.
I have been inspired lately by blues and greens. I am also loving beautiful wallpaper I'm seeing online, and this one by Rachel Ashwell is stunning to me. I am trying to think of a way to use it in our home. Hmmm....
We are finishing up a little house we've been building, and I'm leaning toward this color for the front door. The exterios is painted in Benjamin Moore's Swiss Coffee, and this soothing blue-green is called Lush.

I love frittatas! I've never had one that included greens, and I'm intrigued. You need to write and illustrate your own cookbook. Seriously!
ReplyDeleteRicki Jill, I did not realize you were building a little house! I must've overlooked that hint in last year's post. Oh my goodness, how exciting! Maybe you can use that beautiful wallpaper somewhere in the back of a bookcase, even on removable mdf board as a test?

What a delicious recipe for using the Swiss chard. I'm sure you are enjoying your boxes with all the fresh produce. Such a sweet teapot and I love the wallpaper too.
