I confess that I should have followed my advice from last week's post and walked away from the suckish book I read....that took me two weeks to read...When will I ever learn to stop reading bad books!?!?!?  UGH!!!!

I confess that I'm so happy to see the sun!  We've had lots of rain this spring, especially during June.

I confess that after several days of bland food, I wanted some comfort food! So I cooked a Southern staple, Poppy Seed Chicken Casserole.  I can't tell you how many functions I've attended over my lifetime where this has been served.  Every Southern lady knows how to make it.


Poppy Seed Chicken Casserole

Ingredients:
4 cups chopped cooked chicken
1 can cream of chicken soup (condensed)
1 16 oz. tub of Daisy sour cream
8 oz shredded cheddar cheese
3 T poppy seeds
1 sleeve of Ritz crackers, crushed
1/4 cup butter (1/2 stick) melted

Procedure:

Preheat oven to 350 degrees.  Combine everything but the crackers and butter in a bowl and stir well.  Spoon into a lightly greased 11 X 7 inch baking dish.  Top with crackers, and then drizzle butter on top.  

Bake uncovered for 25 - 30 minutes or until bubbly.  Let stand for ten minutes before serving.

Serves 6 - 8.




I could only eat a small plate, but it tasted so good!



There is a recipe for Poppy Seed Chicken Casserole in this cookbook.  There are other Southern classics in it as well.  If you want the quintessential cookbook for traditional Southern recipes, this is the book for you!

I confess that I only subscribe to TWO magazines.  But check this out:

I've received these magazines the past couple of weeks in the mail.  I only subscribe to two ( a third one was a gift subscription but I think it has expired) of them and there are twelve here!
WTH????


So why do you reckon I'm getting all of these magazines?  And a few of them are British!  I don't think I should have to pay for something I didn't order. Has this ever happened to you?  I love magazines, but I only have time to read two or three at the most each month.

  4. I have problems leaving a book unfinished too. It's awful. I think there has only ever been one book I just couldn't finish...and that was years ago.
    That recipe sounds yummy. I might even be able to get my kids to eat it!

  5. well I have never even heard of this yummy dish, not sure if we even have that soup here though, it sounds and looks so good, I would love to have that many magazines arrive on my door step, I am a magazine junkie!

  7. That poppy seed cassarole sounds nice I like a good cassarole hubby though doesn't and when I would make one he would screw up his nose and only eat a small amount then go and make himself something different............

    I hate it when I get a book and find it to be as boring as shit............

  8. I think this non-Southern girl needs to make Poppy Seed Chicken Casserole. It looks great!
    I've been very confused with magazines lately. I swear that I let my subscriptions run out but they keep sending the magazines & a bill. I end up giving in & buying another year every time. I honestly don't have time to read them. I just got July's BH&G when I realized I still hadn't cracked June's issue yet!!

  9. I love hearing about your southern dishes. I've never heard of that one, but it does look yummy.

    I wonder if you are getting those magazines so they can say to their advertisers that they have a circulation of x amount (which people may or may not have paid for). We get free newspapers all the time here in Toronto for periods of time when they are trying to boost circulation.

  15. Ricki Jill~ I confess I'm a magazine junkie. I usually save them and put them in my boat bag to look at on a slow cruise :) Lucky you to get them free :) I haven't had that casserole in ages!

  17. Yum, that chicken casserole looks so good. Have not had that in years! I think the magazine people are desperate and want you to get hooked or fall in love and have to have it!! I only take two also, but only because they are so cheap it's like them giving them to me!! :D
