Just in time for St. Patrick's Day, how about some Irish Spuds for dinner ;P
Irish Spuds
Ingredients:
4 potatoes, poked with fork
2 T butter
4 oz. corned beef, chopped
3 T Thousand Island Dressing
1 cup sauerkraut
4 oz. sliced Swiss cheese
parsley
Directions:
1. Preheat oven to 425 degrees.
2. Microwave potatoes on high for ten minutes. Rotate and cook seven minutes longer.
3. Cut off top third of potatoes and scoop out flesh. Mash with butter, and return to potato skins.
4. Top with corned beef, dressing, sauerkraut, and cheese.
5. Bake 10 minutes.
Okay, so this is really like a rueben sandwich in a potato, but I think it looks and tastes Irish!
