As promised, here is my recipe for Slow Cooker Sweet Potato Chili. I love this recipe because it's low calorie (362) and high in fiber with 22g of fiber and 20g of protein!
Slow Cooker Sweet Potato Chili
Ingredients:
1 medium red onion, chopped
1 bell pepper, any color, chopped
4 garlic cloves, minced
1/2 T chili powder
1/2 T smoked paprika
1 T ground cumin
2 t unsweetened cocoa powder
1/4 t cinnamon
28-ounce can fire-roasted diced tomatoes
15.5 oz. can kidney beans, rinsed
15.5 oz. can black beans, rinsed
1 medium sweet potato cut into 1/2 inch pieces
1 cup water
Method:
Pour the contents of the tomato can (including liquid) into crockpot. Add all other ingredients and stir.
Cover and cook on low for 7 - 8 hours or high for 4 to 5 hours.
Top with cilantro and fat free sour cream or Greek yogurt if desired.
Number of servings: 6
Serving size: One heaping cup.

Prep is so easy for this recipe...just a little chopping, measuring and mixing, then forget about it for a few hours!

I'd really like to try this. We have something in the slow cooker about once a week and I could use a new recipe. I love sweet potatoes in any dish! Enjoy your evening my friend!
ReplyDeleteWe have both our kids in town and my husband is grilling burgers - 3/4 beef and 1/4 ground bacon. It would really be decadent if we added a little bleu cheese. Instead of buns, we are using fresh from the baker asiago cheese bread.

I made the regular chile today. It just seems to go with football. Dan was a happy man when he came home from the golf course. I will have to try this recipe. It looks good to me!
