Slow Cooker Sweet Potato Chili

Saturday, September 21, 2013

As promised, here is my recipe for Slow Cooker Sweet Potato Chili.  I love this recipe because it's low calorie (362) and high in fiber with 22g of fiber and 20g of protein!

Not very pretty....but it does taste great!

Slow Cooker Sweet Potato Chili

1 medium red onion, chopped
1 bell pepper, any color, chopped
4 garlic cloves, minced
1/2 T chili powder
1/2 T smoked paprika
1 T ground cumin
2 t unsweetened cocoa powder
1/4 t cinnamon
28-ounce can fire-roasted diced tomatoes
15.5 oz. can kidney beans, rinsed
15.5 oz. can black beans, rinsed
1 medium sweet potato cut into 1/2 inch pieces
1 cup water

Prep is so easy for this recipe...just a little chopping, measuring and mixing, then forget about it for a few hours!

Pour the contents of the tomato can (including liquid) into crockpot.  Add all other ingredients and stir.
Cover and cook on low for 7 - 8 hours or high for 4 to 5 hours.

Top with cilantro and fat free sour cream or Greek yogurt if desired.

Number of servings: 6
Serving size:  One heaping cup.

Here's some eye candy in case you hurled looking at the chili:

The Erin roses finally opened-up!

What are you having for supper?

We're having Honey Mustard Chicken, Cheesy Broccoli, and Corn.

Until next time...

Ricki Jill

  1. I'd really like to try this. We have something in the slow cooker about once a week and I could use a new recipe. I love sweet potatoes in any dish! Enjoy your evening my friend!

  2. We have both our kids in town and my husband is grilling burgers - 3/4 beef and 1/4 ground bacon. It would really be decadent if we added a little bleu cheese. Instead of buns, we are using fresh from the baker asiago cheese bread.

Steve likes chili, but it isn't something he makes so maybe I will make some on our first chilly day.

  3. Hey! We had cajun curry mustard chicken, but I forgot to plan a veggie...will you share?

  4. This looks great, RJ! Cocoa powder?! I have to try this!

    I've been behind on blogging...sorry. :(

  5. I was wondering when you were making that chili, it looks amazing, no hurling here but I do love the roses,

  6. My husband made us sliders for dinner. ;-)
Happy First Day of Fall tomorrow.......Sarah

  7. I will have to give this a try. I love stews and the healthy the better now. I have never had sweet potatoes in a stew before. Time to try.

  8. Happy Fall Equinox! I will definitely make this low cal, low calorie/high fiber/lots of protein chili. We had chicken parmesan ;o)

  9. Hi Ricki, Your roses look gorgeous! Such pretty fall colors:) It's crock pot season and this one looks hearty. Thanks for sharing the recipe! xxleslie

  10. This sounds really yummy, Ricki Jill! Might have to add some TVP in place of some of the beans to make it low-carb, but I like the idea of the sweet potato -- we love 'em!

  11. This looks so good!! I am definitely going to try it!

  12. The chili looks fine RJ, and I’m sure it was delicious. I like this is a little different for the standard fare. I’m adding to my list of recipes to try.
Hope you enjoyed last evening, I though it was slow and not together but happy to add in the right column!
    Have a great week.

  13. I made the regular chile today. It just seems to go with football. Dan was a happy man when he came home from the golf course. I will have to try this recipe. It looks good to me!

  14. My kids love chili...and they both love sweet potatoes too. Next time they are home I am making this. LOVE that you used a crockpot!

  15. We made chili on Saturday. Your recipe looks scrumptious delicious! I plugged the recipe in my recipe calculator, not bad in the carbs area too.
