Creole Tomatoes

My mother-in-law brought us some delicious Creole tomatoes from Louisiana last weekend. They are the most delicious tomatoes on the planet!  I was trying to decide what to do with them, when I serendipitously read one of Jess's recipes at Red Rose Alley.  Problem solved!     The info on the gravy was great...thanks. It is brand new to me. Had never heard of it before this week. I sure do like it.
    NOW...let's get down to business...tell me about CHOCOLATE SALT...
