My mother-in-law brought us some delicious Creole tomatoes from Louisiana last weekend. They are the most delicious tomatoes on the planet! I was trying to decide what to do with them, when I serendipitously read one of Jess's recipes at Red Rose Alley. Problem solved! Please visit Red Rose Alley and check-out Jess's recipe for Insalata Caprese here. Her pictures are better than mine (I waited until it was too dark to get good photos) so go see hers.
Until next time...
Blessings!
