#ChristmasCookies

Welcome to Christmas Cookie Week 2013! This year, 8 bloggers have come together to share a daily recipe for yummy and delicious cookies that we hope will inspire you during this season of Christmas baking! Everyone's from different parts of Canada,  except for me....I'm an Alabama Girl... but we all share a joy of baking which makes for love…fresh from the oven!

It's the last day for Christmas Cookie Week.  *sadface*

Today's featured cookie is the ever popular date ball.  During Christmas, most Southern parties have the holy trinity of balls:  date, sausage, and bourbon.  We Southerners love our balls!  :/

Southern Date Balls

Ingredients:
1 cup sugar
1 stick butter
1 egg, well beaten
1 cup pitted dates, finely chopped
1 cup nuts, finely chopped (I like walnuts)
1 teaspoon vanilla
2 cups Rice Krispies
Confectioner’s sugar

Directions:
Melt butter and sugar in a medium sauce pan over low heat.
Add egg and stir until thoroughly incorporated.
Add dates, nuts and vanilla and bring to a boil. Reduce heat to low and simmer 10 minutes.
Remove from heat and stir in Rice Krispies.
When cool enough to handle, roll into bite-sized balls and roll in confectioner’s sugar.

Easy-peasy-lemon-squeezy!

Until next time…

  4. "The Holy Trinity of balls" made me spit out my coffee I was laughing so hard! :D

I've never been big on dates, but I shall have to try these! And Bourbon Balls? What are those? We have bourbon at the house, but we don't drink it, so I'd love an excuse to use it up and free up the shelf space. :)
