I actually cooked lunch today, and I want to share a healthy recipe with you.

I actually cooked lunch today, and I want to share a healthy recipe with you.
Vegetable Quinoa with Cashews
Ingredients:
1 cup uncooked quinoa, rinsed
1 red bell pepper, diced
15 oz. can reduced sodium vegetable broth
1 cup sliced mushrooms
1 carrot, sliced
1/4/ cup chopped cashews
6 scallions, diced
Procedure:
1. Rinse quinoa thoroughly under cold water. Bring quinoa and broth to a boil in a sauce pan; cover and simmer on low for 15 minutes or until broth is absorbed.
2. Meanwhile, sauté carrots for one minute in a large frying pan sprayed with cooking spray. Add remaining vegetables, season with a little salt and pepper and cook for another five minutes or until vegetables are tender.
3. Mix quinoa and vegetable mixture and add cashews before serving.
Makes six 1 cup servings.
I also added 1 cup steamed broccoli and 1/2 cup pineapple. The calories for the meal: 296!
Tonight we're having homemade pizza while we watch the Alabama v. Kentucky football game.

I just printed this out. Quinoa is my new favorite. I posted today about Cedar Lane quinoa tabouli at Costco but love what you've done with this healthy grain so will try it right away.
