Saturday, October 12, 2013

Happy Saturday, My Lovelies!

I hope y'all are enjoying gorgeous autumn weather wherever you are.

It's so nice to be home!!!  {with no plans}  :D

I actually cooked lunch today, and I want to share a healthy recipe with you.

Vegetable Quinoa with Cashews

1 cup uncooked quinoa, rinsed
1 red bell pepper, diced
15 oz. can reduced sodium vegetable broth
1 cup sliced mushrooms
1 carrot, sliced
1/4/ cup chopped cashews
6 scallions, diced

1.   Rinse quinoa thoroughly under cold water.  Bring quinoa and broth to a boil in a sauce pan; cover and simmer on low for 15 minutes or until broth is absorbed.
2.   Meanwhile, sauté carrots for one minute in a large frying pan sprayed with cooking spray.  Add remaining vegetables, season with a little salt and pepper and cook for another five minutes or until vegetables are tender.
3.   Mix quinoa and vegetable mixture and add cashews before serving.

Makes six 1 cup servings.

I also added 1 cup steamed broccoli and 1/2 cup pineapple.  The calories for the meal:  296!

Tonight we're having homemade pizza while we watch the Alabama v. Kentucky football game.

What are you doing this weekend?

  1. I just printed this out. Quinoa is my new favorite. I posted today about Cedar Lane quinoa tabouli at Costco but love what you've done with this healthy grain so will try it right away.

I like your addition of some fresh pineapple--a good inflammatory!

  2. That looks delicious, and it's gluten-free. One of us can't have gluten.

  3. This sounds yummy! I love the nuts and pineapple additions, sounds delightful.
I'm giving it a try. Thanks so much for stopping by and for the pin, you are the best!

  4. This sounds very good! I am going to try it next weekend. Thanks so much for posting it!

  5. I'll be trying this! Such a healthy grain and I'm always looking for different ways to prepare it.

  6. That looks sooo good! I have to try that soon!

  7. Between the quinoa and pineapple, this is one healthy dish!

  8. Hi Ricki! Thank you for linking up to my shy Sunday series :) I was more than happy to discover that you linked up. You know how much I love your blog. This is also the first when someone posted a delicious and healthy recipe in my series.

Have a great week ahead Ricki! Looking forward in reading your Halloween to Christmas posts.
