What We're Having for Dinner: Going Green

Wednesday, May 8, 2013

I meant to put this tablescape together for Earth Day, but I put it on hold due to life getting in the way!  ;P

Resources:
Bowls:  Biscuit via Anthropologie
Plates and table runner:  Allegra Hicks via West Elm
Recycled wine punt glasses:  West Elm
Placemats and napkin rings:  Pier 1
Napkins:  The Home Depot
Salt and pepper set:  Aurora pattern by MacKenzie-Childs
Crystal vase:  Lismore by Waterford via Neiman-Marcus

Green Menu:

Macadamia-Pineapple Slaw
Cucumber-Mint Couscous
(both recipes from Celebrate Magazine, Summer, May/June 2013)
Chicken with Tarragon Salsa Verde  (View recipe here.)
Key Lime Pie

Macadamia-Pineapple Slaw

(serves 4)

Ingredients:
4 cups shredded green cabbage
1 cup fresh pineapple, chopped
1/4 cup chopped and toasted macadamia nuts
2 T champagne wine vinegar
1/4 cup canola oil
1 teaspoon sugar
salt and pepper to taste

Place cabbage, nuts, and pineapple in a large bowl.  In a small bowl, place vinegar and slowly whisk in oil.  Add sugar and salt and pepper to taste.  Pour dressing over cabbage mixture and gently toss to combine.

Best served chilled after a couple of hours.

Notice my burned toasted macadamia nuts?  :/

So what are you having for dinner (or supper if you live in the Lower South....)

Until next time...

Blessings!
Ricki Jill

  1. Sounds delicious and your table is so pretty. For supper we might have salad and grilled chicken. Trying to eat healthy. I have a watermelon that needs to be cut up too. :)

  2. Your table setting is lovely, RJ! I really love those place mats. I was told World Market has something similar but we don't have one nearby. I'll check out Pier 1.

The slaw looks so good! :)
