Macadamia-Pineapple Slaw
Cucumber-Mint Couscous
(both recipes from Celebrate Magazine, Summer, May/June 2013)

Key Lime Pie
Macadamia-Pineapple Slaw
(serves 4)
Ingredients:
4 cups shredded green cabbage
1 cup fresh pineapple, chopped
1/4 cup chopped and toasted macadamia nuts
2 T champagne wine vinegar
1/4 cup canola oil
1 teaspoon sugar
salt and pepper to taste
Place cabbage, nuts, and pineapple in a large bowl. In a small bowl, place vinegar and slowly whisk in oil. Add sugar and salt and pepper to taste. Pour dressing over cabbage mixture and gently toss to combine.
Best served chilled after a couple of hours.
Notice my burned toasted macadamia nuts? :/

Sounds delicious and your table is so pretty. For supper we might have salad and grilled chicken. Trying to eat healthy. I have a watermelon that needs to be cut up too. :)
