I have been cooking up a storm since we were snowed and iced in for several days. I want to share a couple of breakfast recipes with you (I'll share the second one with you next week).
My eighteen year old daughter loves oatmeal, so I baked an oatmeal dish from The Fresh Market's Holiday Survival Guide. I love it!
Baked Berry Oatmeal
Ingredients: |
For garnish: TFM Strawberry Jam, warmed Plain Greek Style yogurt |
Preparation: |
Preheat oven to 400. In a large bowl, stir together rolled oats, steel cut oats, baking powder, salt and cinnamon; set aside. In a medium bowl, combine milk, egg, applesauce, oil, honey and brown sugar. Add to mixture and stir until combined. Pour into a greased 2 quart souffle dish or casserole dish. Bake uncovered for 20 minutes. Stir mixture and fold in berries. Bake uncovered for an additional 20 minutes, until lightly browned. Spoon into bowls and serve with yogurt and warmed strawberry jam. |
Note: I used blueberries and blueberry jam this time around. I think the Greek style yogurt makes the dish extra special!

ReplyDeleteoH, I will have to try this soon on a weekend most likely. This weekend we will be away in Charleston to celebrate hubby's birthday....of course I could make it one evening and have it in the morning.....perhaps!!
