Happy Thursday!  Do you have special Father's Day plans?  I'll be cooking all weekend for a crowd at the lake.  Mr. Art @ Home loves good food and lots of company!  ;P

I'm starting to see Alabama peaches at the farmers' markets, but it's still a little soon to eat them. However, you can bake them in a cobbler, and they are sweet and delicious!  (NOTE:  The worker at one of my favorite fruit stand told me they're fairly sweet, but that these early peaches are much better before they're ripe.)  This cobbler recipe is from Southern Living Magazine from many years ago when we had a preschooler and a baby.  It's easy, and it's fantastic!

Super-Easy Peach Cobbler

Ingredients:
1/2 cup unsalted butter
1 cup all-purpose flour
2 cups sugar, divided
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 (heaping!) cups fresh peach slices
1 tablespoon lemon juice
Ground cinnamon

Directions:
1.   Melt butter in a 13" x 9" baking dish.
2.   Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
3.   Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired.
4.   Bake at 375° for 40 to 45 minutes or until golden brown. Let cool a little and serve warm.

This one's a keeper, y'all!

Until next time...

Blessings!
Ricki Jill

  1. I LOVE Peach Cobbler. When I was little my grandmother and I would make it from scratch on warm Summer nights and sit and eat it while we played Old Maid. Somewhere along the way my dad started making it with Cake Mix instead of from scratch and I don't like it that way-it's too oddly sweet. Easy, but not as good! I must try this!

  3. The cobbler looks wonderful and I am pinning it to my YUM! Pinterest board.

I have had requests for my lemon bars for Father's Day. It is also our little, now big, puppy's 1st birthday. I know she also likes the lemon bars because she once ate half a tray of them.

  4. RJ, the Texas peaches have been available for about a month now. We should have good peaches well into July. Yum! We eat them fresh, but sometimes we freeze some for the year for making peach cobblers and pies. I've used this same recipe. It's great!

  10. I have got to Pin this because my daughter is always asking for peach cobbler. It's funny because neither she nor I have ever had peach cobbler before, but for some reason, she's hung up on it. Thanks for the recipe, Ricki!

  12. Ricki Jill,
This peach cobbler looks scrumptious. I think the ground cinnamon makes it. You know, this is one of my husband's favorite desserts.

I hope you are enjoying the June days.

    love,
